This Lemon Butter Baked Mahi Mahi is a quick and flavorful seafood dish featuring succulent mahi mahi fillets baked on a bed of lemon slices and brushed with a zesty butter seasoning blend. Perfect for a healthy weeknight dinner, it combines bright citrus notes with aromatic herbs and spices for a deliciously tender and moist fish.

  • Total Time: 22 minutes
  • Yield: 4 servings

Ingredients

Fish and Citrus

  • 2 lemons, sliced into thin rounds
  • 1 pound Mahi Mahi fillets

Butter and Seasonings

  • 2 tablespoons butter, melted
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons finely chopped parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the fish.
  2. Prepare Baking Sheet: Line a rimmed baking sheet with aluminum foil for easy cleanup. Arrange the lemon slices in a single layer on the foil so the fish will rest on top of them during cooking.
  3. Place and Butter Fish: Lay the mahi mahi fillets over the lemon slices. Using a brush, coat both sides of the fish evenly with the melted butter to add flavor and moisture.
  4. Season the Fish: In a small bowl, combine paprika, garlic powder, dried oregano, sea salt, dried thyme, red pepper flakes, onion powder, and black pepper. Sprinkle this seasoning mix evenly over both sides of the fish to enhance the taste.
  5. Bake and Broil: Bake the fish in the preheated oven for 10 minutes. Then switch the oven to broil on high and broil the fish for about 1 1/2 minutes to develop a slightly crisp, golden top.
  6. Add Fresh Parsley and Serve: Remove the fish from the oven and sprinkle with finely chopped parsley for a fresh, herbal finish. Serve immediately while hot and juicy.

Notes

  • Make sure to slice the lemons thinly to release their juices and aroma during baking.
  • Keep an eye on the fish during broiling to prevent burning; the short time crisps the top just right.
  • You can substitute mahi mahi with other firm white fish like cod or halibut if desired.
  • Serve with steamed vegetables or a light salad for a complete, healthy meal.
