  • 1-2 teaspoons olive oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • 1 large burrito-size tortilla or 3-4 smaller tortillas
  • 12-15 ounces red enchilada sauce (such as La Preferida Organic red sauce)
  • 2 cups freshly shredded mozzarella or cheddar cheese

Instructions

  1. Preheat and Cook Beef: Preheat your oven to 400℉ (200℃). Heat 1-2 teaspoons of olive oil in a large cast iron or oven-safe skillet over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook for 6-7 minutes until fully cooked through.
  2. Season Beef: Stir in 1 tablespoon of taco seasoning along with 1/4 cup of water. Mix well to coat the beef evenly with the spices.
  3. Layer Ingredients: Place the tortilla(s) directly on top of the cooked beef in the skillet. Pour the red enchilada sauce evenly over the tortilla layer, then sprinkle 2 cups of shredded mozzarella or cheddar cheese on top.
  4. Bake: Place the skillet uncovered in the preheated oven and bake for 10-15 minutes, or until the cheese is melted, bubbly, and golden brown in spots. If the cheese does not brown to your liking, switch the oven to broil on high and broil for 1 minute or until browned.
  5. Serve and Garnish: Remove the skillet from the oven. Use a large serving spoon to portion out servings into shallow bowls. Add optional toppings such as sour cream, cilantro, and sliced green onions as desired.
