Combine Ingredients: In a bowl, jar, or container, add 3 tablespoons of chia seeds, lime juice and zest from the lime(s), 1/2 cup plain Greek yogurt, 1/2 cup unsweetened almond milk, 1 teaspoon pure maple syrup, and 1/4 teaspoon matcha powder if using. Stir together thoroughly to ensure everything is evenly mixed.
  2. Refrigerate: Cover the chia mixture and place it in the refrigerator for at least 2 hours, or preferably overnight. This resting period allows the chia seeds to absorb liquid and thicken to a pudding-like consistency.
