Chia Pudding Base
- 3 Tbsp chia seeds
- Juice and zest of 1 regular lime or 2 key limes
- 1/2 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk (or other milk)
- 1 tsp pure maple syrup
- 1/4 tsp matcha powder (optional, for color)
Topping
- 1/4 cup graham crackers, crumbled (optional)
Instructions
- Combine Ingredients: In a bowl, jar, or container, add 3 tablespoons of chia seeds, lime juice and zest from the lime(s), 1/2 cup plain Greek yogurt, 1/2 cup unsweetened almond milk, 1 teaspoon pure maple syrup, and 1/4 teaspoon matcha powder if using. Stir together thoroughly to ensure everything is evenly mixed.
- Refrigerate: Cover the chia mixture and place it in the refrigerator for at least 2 hours, or preferably overnight. This resting period allows the chia seeds to absorb liquid and thicken to a pudding-like consistency.
- Stir and Serve: Remove the pudding from the fridge, give it a good stir to break up any clumps, then serve it topped with the crumbled graham crackers for added texture and flavor.
Notes
- Using key limes delivers the most authentic flavor, but regular limes work well too.
- The matcha powder is optional and only adds color, it does not affect the flavor significantly.
- To keep it dairy-free, use a plant-based yogurt instead of Greek yogurt.
- For a sweeter pudding, adjust maple syrup quantity to taste.
- Store leftover pudding covered in the fridge for up to 3 days.
