Ingredients
Meatballs:
- 1 small onion, finely chopped
- 1 teaspoon chili flakes
- 14 oz ground turkey
- 1 large egg
- ⅓ cup almond flour
- ¼ cup Parmesan cheese, grated
- 2 teaspoons dried oregano
- Salt and pepper, to taste
- Extra virgin olive oil, for cooking
Sauce & Garnish:
- 1½ cups tomato sauce
- Fresh parsley, chopped, for garnish
Instructions
- Cook the onions: Heat a drizzle of extra virgin olive oil in a skillet over medium heat. Add the finely chopped onion and sauté until soft and golden, which should take about 5-7 minutes. This will build flavor for the meatballs.
- Make the meatball mixture: In a large bowl, combine the cooked onions, ground turkey, egg, almond flour, grated Parmesan cheese, dried oregano, chili flakes, and salt and pepper. Mix thoroughly until all ingredients are fully incorporated, ensuring a homogeneous and well-seasoned mixture.
- Shape the meatballs: Using your hands, roll the mixture into evenly sized meatballs, about 1 ½ inches in diameter, making sure they are tightly packed to maintain shape while cooking.
- Brown the meatballs: Heat more olive oil in the skillet over medium heat. Add the meatballs carefully and cook, turning occasionally, until browned on all sides, approximately 6-8 minutes. This step seals in juices and adds a delicious crust.
- Simmer in sauce: Once browned, pour the tomato sauce into the skillet with the meatballs. Reduce the heat to low, cover, and let simmer gently for 10-12 minutes. This allows the meatballs to cook through completely and soak up the tomato flavors while staying moist.
- Finish & serve: Remove from heat, garnish with freshly chopped parsley, and serve warm. These meatballs pair wonderfully with steamed vegetables, zoodles, or a fresh salad for a complete keto-friendly meal.
Notes
- Almond flour is used instead of breadcrumbs to keep this recipe low-carb and keto-friendly.
- Be sure not to overcrowd the pan when browning meatballs to ensure even cooking and browning.
- The chili flakes add a subtle heat; adjust the amount based on your spice preference.
- Use fresh parsley for garnish to add brightness and color to the dish.
- Ground turkey breast or dark meat can be used; dark meat tends to be juicier but slightly higher in fat.
