This classic Prime Rib recipe delivers a perfectly seasoned and tender roast with a flavorful garlic-rosemary crust. Ideal for special occasions, the recipe uses simple ingredients and straightforward roasting techniques to achieve a juicy and savory prime rib with a crispy outer crust.

  • Total Time: 2 hours to 2 hours 15 minutes
  • Yield: 8-10 servings

Ingredients

Prime Rib

  • 1 prime rib, 3-12 lb (6 lb recommended)
  • Kosher salt, to taste
  • Ground black pepper, to taste

Rub

  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon chopped fresh rosemary
  • 3 cloves garlic, minced (not pressed)

Instructions

  1. Prep the Rib: Allow the prime rib to come to room temperature before cooking, usually about 1-2 hours. This ensures even cooking throughout.
  2. Make the Rub: Combine the olive oil or melted butter with minced garlic and chopped fresh rosemary in a small bowl. Mix well to create a flavorful paste.
  3. Season the Meat: Generously season the prime rib all over with kosher salt and freshly ground black pepper. Then rub the garlic-rosemary mixture all over the surface of the meat, ensuring even coverage.
  4. Preheat the Oven: Preheat your oven to 450°F (232°C) to initially sear the outside of the roast.
  5. Roast the Prime Rib: Place the rubbed prime rib on a roasting rack inside a roasting pan, fat side up. Roast at 450°F for 15-20 minutes to develop a browned crust.
  6. Lower the Temperature: Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness: 120-125°F for rare, 130-135°F for medium-rare, or 140-145°F for medium. Use a meat thermometer to check the temperature, which may take about 1.5 to 2 hours depending on size.
  7. Rest the Meat: Once done, remove the roast from the oven and tent it loosely with foil. Let it rest for 20-30 minutes to allow juices to redistribute and improve tenderness.
  8. Carve and Serve: Slice the prime rib against the grain into thick slices. Serve immediately with your choice of sides and sauces.

  • Bringing the meat to room temperature before cooking promotes even doneness.
  • Use a reliable meat thermometer to accurately gauge internal temperature.
  • Resting is crucial to keep the meat juicy and tender.
