Prime Rib

Rub

Instructions
- Prep the Rib: Allow the prime rib to come to room temperature before cooking, usually about 1-2 hours. This ensures even cooking throughout.
- Make the Rub: Combine the olive oil or melted butter with minced garlic and chopped fresh rosemary in a small bowl. Mix well to create a flavorful paste.
- Season the Meat: Generously season the prime rib all over with kosher salt and freshly ground black pepper. Then rub the garlic-rosemary mixture all over the surface of the meat, ensuring even coverage.
- Preheat the Oven: Preheat your oven to 450°F (232°C) to initially sear the outside of the roast.
- Roast the Prime Rib: Place the rubbed prime rib on a roasting rack inside a roasting pan, fat side up. Roast at 450°F for 15-20 minutes to develop a browned crust.
- Lower the Temperature: Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness: 120-125°F for rare, 130-135°F for medium-rare, or 140-145°F for medium. Use a meat thermometer to check the temperature, which may take about 1.5 to 2 hours depending on size.
- Rest the Meat: Once done, remove the roast from the oven and tent it loosely with foil. Let it rest for 20-30 minutes to allow juices to redistribute and improve tenderness.
- Carve and Serve: Slice the prime rib against the grain into thick slices. Serve immediately with your choice of sides and sauces.
