Egg Mixture
- 2 large eggs
- 150 ml Dashi Broth
- 1 teaspoon soy sauce
- 1 teaspoon mirin
Filling
- 100 g boneless, skinless chicken breast (cut into 6 small cubes)
- 25 g crab meat (divided)
Garnish and Serving
- scallions (cut into small rings, for garnishing)
- 60 ml Dashi Sauce (optional)
Instructions
- Prepare the Filling: Place the chicken cubes and part of the crab meat into the bottom of each chawanmushi cup, reserving some crab meat for topping later.
- Make the Egg Mixture: In a bowl, crack the eggs and beat them well. Add the dashi broth, soy sauce, and mirin, mixing thoroughly to combine all ingredients evenly.
- Strain the Mixture: Pour the egg mixture through a fine-mesh strainer twice to ensure a smooth and silky custard texture without any lumps or chalazae.
- Fill the Cups: Carefully pour the strained egg mixture into the prepared chawanmushi cups over the chicken and crab meat, taking care to avoid air bubbles. If bubbles appear, gently tap the cups on the counter or pop them with a toothpick before steaming.
- Steam the Custard: Cover the cups and steam them gently for 15 minutes until the custard is set and just firm to the touch but still silky inside.
- Finish and Serve: Spoon the optional dashi sauce over the steamed eggs. Garnish with the reserved crab meat and scallion rings. Serve immediately while warm.
Notes
- Use a gentle steaming method to avoid toughening the egg custard; make sure the water is simmering, not boiling vigorously.
- Straining the egg mixture twice helps achieve the signature silky smooth texture of chawanmushi.
- If you don’t have dashi broth, you can substitute with a light chicken broth, but the authentic umami flavor may be diminished.
- Covering the cups during steaming prevents water droplets from disturbing the custard surface.
- Adjust steaming time slightly depending on cup size and steaming setup.
