This Instant Pot Sushi Rice recipe provides a quick and easy method to prepare perfectly cooked sushi rice using the pressure cooking technique. The rice is rinsed thoroughly, cooked under high pressure, and then seasoned with a warm mixture of rice vinegar, salt, and sugar, resulting in fluffy, flavorful rice ideal for sushi rolls and other Japanese dishes.

  • Total Time: 27 minutes
  • Yield: 4 servings

Ingredients

Sushi Rice

  • 1 cup sushi rice
  • 1 cup cold water

Seasoning

  • 2 tbsp unseasoned rice vinegar
  • 1 tsp salt
  • 1 tbsp sugar

Instructions

  1. Gather Ingredients: Collect all sushi rice ingredients needed for the recipe.
  2. Rinse Rice: Pour the sushi rice into a mixing bowl and cover with water. Use your fingers to gently swish the rice to clean it.
  3. Drain and Repeat: Tilt the bowl to drain the cloudy water. Refill the bowl with fresh water and repeat rinsing and draining until the water runs clear. Use a strainer to prevent rice from escaping into the sink.
  4. Drain Well: Let the rinsed rice drain well in the strainer for a few minutes until water stops dripping.
  5. Add Rice and Water to Instant Pot: Transfer the rice and 1 cup cold water into the Instant Pot.
  6. Pressure Cook Rice: Lock the lid and set the valve to Sealing. Pressure cook on High for 5 minutes, or alternatively cook for 12 minutes on Low Pressure.
  7. Prepare Seasoning Mixture: While the rice cooks, combine rice vinegar, salt, and sugar in a microwave-safe bowl. Microwave for about 1 minute until warm and fully dissolved.
  8. Release Pressure: Once cooking is done, let the pressure release naturally for 5 to 10 minutes, then manually release any remaining pressure.
  9. Transfer and Spread Rice: Transfer the cooked rice to a glass bowl and gently spread it using a rice paddle, which helps avoid unwanted flavors and prevents overheating.
  10. Season Rice: Pour the warm vinegar mixture over the rice and gently mix until evenly coated.
  11. Cool and Serve: Allow the sushi rice to cool slightly before using it for sushi rolls or other desired dishes. Enjoy!

Notes

  • Rinsing the rice thoroughly removes excess starch, preventing clumpy rice.
  • Using a glass bowl to season the rice helps avoid metallic flavors and retains a neutral temperature.
  • Natural pressure release improves the texture of the rice, avoiding mushiness.
  • Adjust the amount of sugar and salt in the seasoning mixture according to taste preferences.
  • The rice paddle helps mix the rice gently without breaking the grains.
