Ingredients
Cinnamon Dolce Syrup
- 1 1/2 cups water
- 1/2 cup granulated sugar, maple syrup, or monk fruit sweetener
- 2 teaspoons vanilla extract or vanilla bean paste
- 1 1/2 teaspoons cinnamon
- 3 cinnamon sticks (optional)
Latte
- 1 cup ice
- 1-2 shots of espresso (*see notes for coffee options)
- 2-3 tablespoons cinnamon dolce syrup
- 1 cup oat milk (or milk of choice)
- Whipped cream (for topping)
- Cinnamon sugar (for dusting)
Instructions
- Prepare the cinnamon dolce syrup: Add all the syrup ingredients (water, sugar or alternative sweetener, vanilla extract, cinnamon, and optional cinnamon sticks) to a small saucepan over medium-high heat and bring to a boil. Reduce the heat to medium-low and let it simmer for 10-12 minutes, stirring every 2-3 minutes, until the mixture is reduced by half and has thickened.
- Cool the syrup: Remove the saucepan from heat and allow the cinnamon dolce syrup to cool slightly. Store any leftover syrup in an airtight container in the refrigerator for up to 2 weeks.
- Assemble the latte: Fill a tall glass with ice cubes, then pour 2-3 tablespoons of the cinnamon dolce syrup over the ice.
- Add espresso: Brew 1-2 shots of espresso and pour it over the ice and syrup in the glass.
- Finish with milk: Pour 1 cup of oat milk (or your preferred milk) into the glass over the espresso mixture.
- Top and serve: Garnish with whipped cream and dust with cinnamon sugar for a delightful finishing touch. Serve immediately and enjoy your iced cinnamon dolce latte.

- You can use maple syrup or monk fruit sweetener instead of granulated sugar to adjust sweetness and dietary preferences.
- For coffee options, if you don’t have an espresso machine, use strong brewed coffee or concentrate.
- The cinnamon sticks in the syrup are optional but add an extra depth of flavor.
- Store leftover syrup in an airtight container in the fridge for up to two weeks.
- Oat milk can be substituted with any milk of choice such as almond, dairy, or soy milk.
