Ingredients
Caramel Syrup
- 1/2 cup granulated sugar (or coconut sugar)
- 1/2 cup water
- 1/2 teaspoon vanilla extract
- Pinch of salt (optional for salted caramel)
Latte
- 1 cup milk of choice (whole milk, 2%, coconut milk, almond milk, oat milk, etc.)
- 1 cup ice
- 1-2 shots of espresso (or 1/2 cup very strong coffee)
- 1-3 tablespoons caramel syrup (from above or store-bought)
- Optional: whipped cream (dairy-free whipped cream) and caramel sauce for topping
Instructions
- Prepare espresso: If using an espresso machine, pull 1-2 shots of espresso and set aside to cool slightly to avoid melting the ice too quickly when poured.
- Make caramel syrup: In a medium saucepan over medium-high heat, combine water and sugar. Stir continuously until the sugar dissolves, about 2 minutes. Cover and bring to a boil for 2-3 minutes.
- Caramelize sugar: Remove the lid and stir frequently until the syrup turns a light amber color, indicating caramelization. Remove from heat immediately to prevent burning, then stir in vanilla extract and a pinch of salt if desired.
- Mix caramel with milk: Pour 1-3 tablespoons of caramel syrup into a liquid measuring cup depending on sweetness preference. Add 1 cup milk and stir well or froth with a hand frother to combine fully for a creamy texture.
- Assemble the latte: Fill a tall glass with ice cubes, then pour in the caramel syrup and milk mixture over the ice. Gently pour the cooled espresso or strong coffee on top and stir to combine flavors evenly.
- Add toppings: Optionally, top your iced caramel latte with whipped cream and a drizzle of caramel sauce for extra indulgence.
Notes
- The caramel syrup can be stored in an airtight container in the refrigerator for up to two weeks.
- Adjust the caramel syrup quantity based on your sweetness preference.
- Use any milk or milk alternative to suit dietary needs or flavor preferences.
- Espresso can be substituted with very strong brewed coffee if an espresso machine is not available.
- For a dairy-free version, use plant-based milk and dairy-free whipped toppings.
