Ingredients

Pizza Dough

  • 1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough

Sauces

  • 1 cup pizza sauce or pesto

Cheese

  • 8 ounces (2 cups) freshly grated low-moisture part-skim mozzarella cheese or goat cheese, crumbled

Toppings

  • Toppings of your choice (e.g., vegetables, meats, herbs, etc.)

Instructions

  1. Preheat Grill: Preheat your grill to 400 to 500 degrees Fahrenheit. To gauge the temperature without a gauge, hold your hand about 5 inches above the grate; if you can only hold for one second comfortably, the grill is ready.
  2. Prepare Dough: On a floured surface, shape the dough according to your recipe (up to step 5). Lightly brush the top of the dough with olive oil. Transfer a round of dough onto a pizza peel or a flat cookie sheet without a rim.
  3. Grill Dough: Carefully flip the dough onto the preheated grill with the oiled side down against the grate. Close the grill and cook for 2 to 3 minutes until the dough bubbles and is lightly cooked through.
  4. Add Toppings: Remove the crust back onto the peel or flat surface. Spread half of the sauce evenly over the crust leaving a 1-inch bare edge. Sprinkle half of the cheese followed by your desired toppings.
  5. Grill Pizza: Return the pizza to the grill, close the lid, and cook for 2 to 4 minutes until the cheese melts.
  6. Finish and Serve: Remove the pizza to a flat surface, add any remaining toppings like arugula or balsamic reduction, then slice and serve. Repeat with the second pizza. Store leftovers covered in the fridge for up to 5 days.
