Ingredients

Meatballs

  • 1 lb ground chicken (500 grams, chicken mince)
  • 1 egg
  • ½ cup + 2 tbsp breadcrumbs (gluten-free or regular or Panko)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
  • 1-2 tablespoons olive oil for cooking

Sauce & Garnish

  • 2 teaspoons butter
  • 2 cloves garlic (finely diced)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • ¼ cup water
  • 1 spring onion (chopped for garnish)

Instructions

  1. Make meatball mixture: In a large bowl, combine the ground chicken, egg, breadcrumbs, garlic powder, onion powder, salt, and white pepper. Mix gently until ingredients are well incorporated without overmixing to keep the meatballs tender. If the chicken is very lean, add 1 tablespoon olive oil to keep the mixture moist.
  2. Shape the meatballs: With wet hands, roll the mixture into small meatballs and place them on a platter ready for cooking.
  3. Pan-fry the meatballs: Heat a large frying pan or skillet over medium-high heat and add 1 to 2 tablespoons of olive oil. Fry the meatballs for 2 minutes on each side, then flip and cook for an additional 1 minute on each side until golden brown and cooked through. Remove the meatballs from the pan and set aside in a bowl.
  4. Prepare honey garlic soy sauce: In the same pan, add the butter and finely diced garlic. Cook for about 1 minute until the garlic turns golden and fragrant. Add the soy sauce and water, stir for 10 seconds, then add honey. Stir and bring the sauce to a simmer, cooking for 30 seconds to 1 minute until it slightly thickens.
  5. Combine meatballs with sauce: Return the cooked meatballs to the pan and stir to coat them evenly with the honey garlic soy sauce. Allow the sauce to caramelize slightly over medium heat for about 1 minute.
