Ingredients
Chicken and Marinade
- 1 pound chicken breasts, cut into bite-sized pieces
- 1 1/2 tablespoon honey
- 1 chipotle pepper in adobo, minced
- 1 clove garlic, grated
- 2 tablespoons taco seasoning (Siete brand recommended)
- Zest of 1 orange (1-2 teaspoons)
- 1 tablespoon orange juice (about 1 tablespoon)
- 1/2 teaspoon kosher salt
- 1 tablespoon avocado oil
Additional
- Wood skewers (optional, soaked in water 15-30 minutes)
- Optional: 2 tablespoons melted butter mixed with honey for finishing drizzle
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for 15 to 30 minutes to prevent burning during cooking.
- Prepare Marinade: In a bowl, combine the honey, minced chipotle pepper, grated garlic, taco seasoning, orange zest, orange juice, kosher salt, and avocado oil. Mix thoroughly to create the honey chipotle sauce.
- Marinate Chicken: Add the bite-sized chicken pieces to the honey chipotle mixture. Using your hands or tongs, mix well so the chicken is fully coated with the saucy marinade. It will look saucy and a bit messy, which is desired.
- Thread Chicken on Skewers: Carefully thread the marinated chicken pieces onto the soaked wooden skewers, distributing evenly. Typically, one pound of chicken yields about 4 skewers.
- Cook the Skewers: Preheat your air fryer to 400°F (200°C). Place the chicken skewers in the air fryer basket and cook for about 10 minutes or until the internal temperature of the chicken reaches 165°F (74°C). Alternatively, grill the skewers over medium-high heat until cooked through, turning as needed.
- Optional Finishing Touch: For extra flavor, drizzle the cooked skewers with honey or a delicious mixture of 2 tablespoons melted butter and honey before serving.
Notes
- Soaking wooden skewers prevents them from burning during cooking.
- Air frying at 400°F for 10 minutes cooks the chicken evenly and keeps it juicy.
- Grilling is a great alternative that adds a smoky flavor.
- Check chicken doneness using a meat thermometer to ensure it reaches 165°F for safety.
- Leftover skewers can be refrigerated for up to 3 days and reheated gently.
