- Juice of 1/2 orange

Instructions
- Combine Ingredients: In a pot over medium heat, combine the fresh cranberries, brown sugar, honey, bourbon, rosemary sprigs, ground cloves, cinnamon stick, orange zest, orange juice, salt, and freshly ground pepper.
- Simmer the Sauce: Bring the mixture to a boil, then reduce heat to simmer. Cook until the cranberries burst, about 10 minutes, stirring occasionally. Continue simmering until the sauce thickens to your desired consistency. Remember, the sauce will thicken more as it cools.
- Adjust Sweetness and Cool: Remove the pot from heat. Taste the sauce; if it’s too tart, add additional honey to balance the flavor. Remove the rosemary sprigs and cinnamon stick. Allow the sauce to cool completely.
- Refrigerate: Transfer the cooled sauce to an airtight container and refrigerate for at least 2 hours to let the flavors meld. The sauce can be stored in the refrigerator for up to one week.
- Serve: Serve the honey bourbon cranberry sauce chilled, reheated, or at room temperature, as desired.

- The sauce thickens further as it cools, so simmer with care to avoid over-thickening.
