- 2 cups all-purpose flour
- 1 tbsp sugar

- 2 tbsp avocado oil (or vegetable oil)
Frying Oil
- Vegetable oil (for frying, about 2 inches deep in pan)
Toppings
- ½ cup sugar
- 1 tbsp ground cinnamon
- ¼ cup powdered sugar
- 2 tbsp honey
Instructions
- Mix Dry Ingredients: In a medium-sized bowl, combine the flour, sugar, baking powder, and salt. Mix these dry ingredients thoroughly using a fork to ensure even distribution.
- Add Oil: Mix the avocado oil into the warm water, then pour the liquid into the bowl with the dry ingredients. Mix together with your hands until a sticky dough starts to form.
- Knead Dough: Lightly flour a clean work surface and knead the dough there for 3-4 minutes until it becomes smooth. If the dough is still sticky, sprinkle a little more flour on it as you knead. Then divide the dough into two balls for easier rolling later on.
- Rest Dough: Place the dough balls back into the bowl, cover the bowl with a clean towel, and let the dough rest for 20-30 minutes to relax the gluten and make rolling easier.
- Roll Out Dough: Remove the dough from the bowl and place it on a floured surface. Using a rolling pin, roll the dough into a rectangular shape about 1/4 inch thick.
- Cut Dough: Cut the rolled dough into 2-inch squares (or your preferred size). Let these squares rest for another 10 minutes while you prepare the frying oil.
- Prepare Oil: Pour vegetable oil into a large cast iron skillet or Dutch oven, filling it to about 2 inches deep. Heat the oil over medium-high heat until it reaches 375°F.
- Fry Sopapillas: Carefully place 3 sopapilla squares into the hot oil. Fry them until they turn golden on both sides. The dough will briefly sink, then rise and puff up as it fries—if it doesn’t puff, the oil isn’t hot enough.
- Drain Sopapillas: Remove the sopapillas from the oil with a slotted spoon and place them on a cooling wire rack set over a baking sheet to drain excess oil. Allow the oil to return to temperature before frying the next batch.
- Coat with Cinnamon Sugar: While still warm, dip the sopapillas into a bowl of cinnamon sugar to coat if you like.
- Serve: Serve the sopapillas warm, either coated with cinnamon sugar or sprinkled with powdered sugar and drizzled with honey for extra sweetness.
