Ingredients
Cookies:
- 1 cup all-purpose flour
- 3 tablespoons Dutch-process cocoa powder
- 2 tablespoons black cocoa powder
- ⅓ cup corn starch
- ⅓ cup granulated sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 8 tablespoons (1 stick) unsalted butter, cut into smaller pieces and softened to room temperature
- 1 teaspoon vanilla extract
- 1-2 tablespoons honey
Cream Filling:
- 6 tablespoons unsalted butter, softened to room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups powdered sugar
- 2 teaspoons corn starch
- Pinch of salt
Instructions
- Prepare the dough: Add all the dry cookie ingredients—flour, Dutch-process cocoa powder, black cocoa powder, corn starch, granulated sugar, baking soda, and salt—into a food processor. Pulse several times to combine evenly. Add the softened butter, vanilla extract, and one tablespoon of honey, then pulse continuously until the dough forms. If the dough is too dry and doesn’t stick together when pinched, add an additional ½ to 1 tablespoon of honey and pulse until it holds together.
- Chill the dough: Transfer the dough onto plastic wrap and shape it into a rectangle. Wrap tightly and refrigerate for 30 to 60 minutes to firm up, making it easier to roll and cut.
- Preheat the oven: Set the oven temperature to 350˚F (175˚C) in preparation for baking.
- Roll out the dough: Between two sheets of parchment paper, roll the dough out to approximately ⅛ inch thickness to prevent sticking and ensure uniform thickness. For an optional decorative touch, use a lightly oiled embossed rolling pin to create a textured pattern by pressing gently and slowly to avoid tearing the dough.
- Cut the cookies: Using a 1.75 to 2-inch diameter round cookie cutter, cut circles from the rolled dough. Transfer these cutouts to a baking sheet lined with parchment paper. Re-roll any scraps to maximize the number of cookies.
- Bake the cookies: Place the baking sheet in the oven and bake the cookies for 10 to 12 minutes, or until the edges feel dry to the touch. This ensures a crisp texture once cooled.
- Cool the cookies: Allow the cookies to cool on the baking sheet for a few minutes to set, then transfer them to a wire rack to cool completely. The cookies will crisp fully as they reach room temperature.
- Make the cream filling: In a large bowl, whip softened butter and vanilla extract with a hand mixer on medium speed for 1 to 2 minutes until light and fluffy. In a separate bowl, sift together powdered sugar, corn starch, and a pinch of salt. Gradually add this dry mixture into the whipped butter in batches, mixing thoroughly after each addition.
- Set the cream filling: Refrigerate the completed cream filling for at least 30 minutes to allow it to firm up, making it easier to handle during assembly.
- Assemble the Oreos: Scoop about 1 teaspoon of the chilled cream filling and roll it into a neat ball. Sandwich the cream between two cooled cookie rounds, pressing them gently so the cookies do not crack. Alternatively, you may spread the cream, but rolling creates a cleaner look.
- Storage: Store the finished homemade Oreos in the refrigerator for up to one week. Avoid leaving them at room temperature to prevent the cream from softening and the cookies from losing their crispness.
Notes
- Adjust the honey quantity in the dough to achieve the right consistency if it feels too dry.
- Use parchment paper while rolling and baking to prevent sticking and for easy cleanup.
- Black cocoa powder adds a deeper color and intense chocolate flavor, but Dutch-process cocoa can be used alone if unavailable.
- Re-rolling dough scraps multiple times is possible but may affect cookie tenderness slightly.
- Press cookies gently during assembly to avoid cracking while ensuring a good seal.
- Keep assembled cookies refrigerated to maintain cream firmness and cookie crispness.
