Instructions
- Prepare Pancakes: Make your pancake mix according to the box directions. Whisk in the ¼ cup maple syrup to infuse the batter with a rich sweetness. Use this batter to cook 8 pancakes until golden and fluffy, setting them aside warm.
- Cook Folded Eggs: For each sandwich, whisk 2 eggs until fully combined. Spray a medium non-stick skillet and heat it on low. Pour the eggs in, ensuring they cover the bottom of the pan. When the eggs start to set, use a spatula to gently loosen the edges. Fold one side of the eggs towards the center and then the other side, followed by folding the short ends to the middle, creating a compact folded egg shape. Repeat this step for all 4 servings.
- Assemble Sandwiches: Place one pancake on a plate, add a slice of American cheese, then top with the warm folded egg and a cooked sausage patty. Cover with a second pancake if desired or serve open-faced. Repeat assembly for the remaining sandwiches and serve immediately for best taste and texture.
