Brownie Batter

Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and position the rack in the middle to ensure even baking.
- Prepare Pan: Grease an 8-inch or 9-inch square dark metal pan with softened butter. Line the pan with parchment paper, leaving an overhang on all sides for easy removal. Grease the parchment paper with more softened butter and set aside.
- Melt Butter and Chocolate: In a large microwave-safe bowl, combine the butter and half of the chopped bittersweet chocolate (4 ounces). Microwave uncovered for 30 seconds; the butter should melt first. Stir the mixture and continue microwaving in 15-second intervals, stirring between, until the chocolate has fully melted. Alternatively, melt them together using a double boiler on the stovetop.
- Add Cocoa and Sugars: Let the melted chocolate mixture cool slightly. Then stir in the cocoa powder, granulated sugar, and brown sugar until the mixture is smooth and uniform.
- Incorporate Eggs: Add the eggs and extra egg yolk one at a time, stirring thoroughly after each addition to fully incorporate.
- Flavor with Vanilla: Add the vanilla extract and mix well until you reach the “ribbon stage,” where the batter falls back into the bowl in thick, continuous ribbons when lifted with a spoon.
- Sift Dry Ingredients: Place a fine mesh sieve over the bowl and sift the salt and all-purpose flour into the batter. Gently mix just until combined to avoid overmixing.
- Fold in Remaining Chocolate: Fold in the remaining chopped bittersweet chocolate evenly throughout the batter to create pockets of melted chocolate in the baked brownies.
- Transfer to Pan: Pour the batter into the prepared pan and smooth the surface with a spatula for even baking.
- Bake: Bake for 20 to 25 minutes, or until the top is lightly puffed. Adjust baking time depending on your preferred fudginess—less time for gooier brownies, longer for more set.
- Cool: Remove the pan from the oven and allow the brownies to cool completely in the pan.
- Cut and Serve: Use the parchment paper overhang to lift the brownies out of the pan. Cut into 9 to 16 squares depending on desired serving size.
