  2. Add the wet ingredients: Pour in the avocado oil and 180 grams (¾ cup) of hot water to the dry ingredients. Stir with a fork until the dough comes together in a shaggy mass. If the dough feels too dry, add extra water by tablespoon increments until it holds together well.
  3. Prepare dough: Turn the dough onto a lightly floured surface and knead for about 1 minute until it forms a smooth ball that is neither sticky nor overly dry. Divide the dough into 8 equal-sized balls, cover them with a slightly damp towel, and let rest for 20 minutes to relax the gluten.
  4. Preheat skillet: While the dough rests, heat a large cast iron skillet over medium-high heat until hot and ready for cooking the tortillas.
  5. Roll out and cook tortillas: Roll out one dough ball at a time into an 8-inch thin circle on a lightly floured surface. Place the rolled tortilla onto the preheated skillet.
