Ingredients
Dough
- 300g bread flour
- 220g water
- 1/2 tablespoon (3g) kosher salt
- 5g instant yeast
Toppings
- 15-20 slices of pepperoni
- 6 oz Butterkäse, muenster, or provolone cheese, cubed
- 6 oz low moisture whole milk mozzarella, shredded
Finishing
- Olive oil, as necessary (to grease bowl and pan)
- 3 tablespoons hot honey
- Red pepper flakes, to taste
Instructions
- Prepare the dough: In a large mixing bowl, combine the bread flour, instant yeast, and kosher salt. Slowly add water and mix until a sticky dough forms. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with plastic wrap or a clean towel, and let it rise in a warm place for about 1-1.5 hours until doubled in size.
- Preheat the oven and prepare the pan: About 30 minutes before baking, preheat your oven to 500°F (260°C). Generously grease a 10×14-inch Detroit-style pizza pan or a similar rectangular metal pan with olive oil to ensure a crispy crust and help prevent sticking.
- Shape the dough: Once the dough has doubled, gently deflate it and transfer it to the greased pan. Using your fingers, stretch and press the dough evenly into all corners of the pan, forming a thick rectangle crust. Let it rest for 20-30 minutes to allow it to puff slightly.
- Add the cheese and pepperoni: Evenly distribute the cubed Butterkäse (or muenster/provolone) and shredded mozzarella across the dough, ensuring cheese touches the edges so it caramelizes during baking. Arrange the pepperoni slices over the top in an even layer.
- Bake the pizza: Bake the pizza in the preheated oven for 15-20 minutes or until the cheese is melted, bubbly, and the edges are a deep golden brown. The crust underneath should be crisp and golden.
- Finish and serve: Remove the pizza from the oven and let it cool for 5 minutes. Drizzle hot honey evenly over the top and sprinkle red pepper flakes according to your spice preference. Slice and serve immediately for the best texture and flavor.
Notes
- Use a high heat-resistant metal pan for authentic crispy edges typical of Detroit-style pizza.
- Butterkäse can be substituted with muenster or provolone if unavailable but try to use a mild, creamy cheese.
- Hot honey adds a sweet heat balance; adjust the amount based on your taste.
- Allowing the dough to rest after shaping ensures a light crust with good oven spring.
- You can experiment with other toppings but keep cheese to the edges for proper caramelization.
