Creamy, flavorful herby mascarpone mashed potatoes made with Yukon gold potatoes, fresh rosemary, thyme, and sage, enriched with butter, heavy cream, and velvety mascarpone. This comforting side dish offers smooth texture and aromatic herbs, perfect for elevating any meal.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Potatoes

  • 3 lbs Yukon gold potatoes

Herb Butter Cream Mixture

  • 4 tablespoons salted butter
  • 1 tablespoon chopped sage leaves
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh rosemary leaves
  • 2 garlic cloves, smashed
  • 3/4 cup heavy cream

Additional Ingredients

  • 8 oz mascarpone, room temperature
  • Kosher salt, to taste
  • Freshly cracked pepper, to taste

Instructions

  1. Prep and Cook the Potatoes: Peel the potatoes and cut them into chunks of even size for uniform cooking. Place the potato chunks in a 4-quart pot and cover them with cold water. Season the water liberally with kosher salt to enhance the potatoes’ natural flavor. Bring the water to a simmer over medium heat and continue boiling until the potatoes are very tender and can be easily pierced with a fork, about 15-20 minutes.
  2. Make the Garlic Herb Butter: While the potatoes cook, melt the butter in a small saucepan over medium heat. Once fully melted, add the smashed garlic cloves and chopped fresh sage, thyme, and rosemary leaves. Cook this mixture for about 2 minutes, stirring constantly to infuse the butter with the garlic and herb aromas. Add the heavy cream, bring the mixture to a very gentle simmer, then turn off the heat and let the cream steep for 10 minutes to soak up all the flavors. Remove and discard the garlic cloves before proceeding.
  3. Mash the Potatoes: Drain the cooked potatoes thoroughly using a colander and return them to the pot they were cooked in to allow excess moisture to evaporate briefly. Lightly mash the potatoes using a potato masher or fork to break them up but avoid over-mashing for a fluffier texture. Slowly add the warm herbal butter and cream mixture and continue mashing to incorporate smoothly. Add the room-temperature mascarpone in several additions, mashing continuously to reach your preferred creamy consistency. Season generously with kosher salt and freshly cracked pepper to taste. Serve the mashed potatoes immediately while warm and fluffy for the best texture and flavor.

Notes

  • Use room temperature mascarpone to ensure it blends smoothly into the mashed potatoes without clumping.
  • Smashed garlic is removed after steeping to give a mild garlic flavor without overpowering the dish.
  • Yukon gold potatoes are ideal for mashing due to their creamy texture and natural buttery flavor.
  • Adjust the herb quantities based on your preferred intensity of herbal notes.
  • Serve this dish immediately as mashed potatoes can firm up or separate upon cooling.
