Ingredients
Shortbread Layer
- 1/2 cup coconut flour
- 1/2 cup almond flour
- 1/3 cup coconut oil, melted
- 3 tbsp honey, warmed (or substitute with maple syrup)
Caramel Layer
- 1/2 cup almond butter, creamy or crunchy (or any favorite nut or seed butter)
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- Pinch of sea salt
Chocolate Layer
- One 2.5 oz dark chocolate bar (or 1/2 cup chocolate chips)
- 1 tbsp coconut oil
- 1/4 tsp flakey sea salt
Instructions
- Preheat Oven and Prepare Shortbread Base: Preheat your oven to 350°F (175°C). In a large bowl, combine the coconut flour, almond flour, melted coconut oil, and warmed honey. Stir thoroughly until all the flour is absorbed and forms a crumbly yet cohesive mixture.
- Form and Bake Shortbread Layer: Line a 6×6 inch baking dish with parchment paper. Use a silicone spatula to pack down the shortbread mixture evenly into the base of the dish. If the mixture sticks to the spatula, dip it in melted coconut oil to ease pressing. Bake in the oven for 10-12 minutes until the edges start to turn golden. Remove and let cool completely.
- Prepare Caramel Layer: In a saucepan over medium-low heat, combine almond butter, coconut oil, vanilla extract, maple syrup, and a pinch of sea salt. Heat while whisking continuously for 2-3 minutes until the mixture becomes completely liquified and smooth. Remove from heat and allow to cool fully.
- Make Chocolate Layer: Break the dark chocolate bar into small pieces and place in a bowl with coconut oil. Warm in the microwave in 30-second intervals, stirring between each, until fully melted and smooth. Alternatively, melt gently over the stove.
- Assemble TWIX Bars: Once the shortbread base and caramel are completely cooled, pour the caramel over the base and spread evenly. Place the dish in the freezer for 1-2 hours to fully harden the caramel layer.
- Add Chocolate Topping and Chill: Remove the dish from the freezer once the caramel is fully set. Pour the melted chocolate over the caramel layer, spreading it evenly. Sprinkle the tops with flakey sea salt. Place in the refrigerator for 5-10 minutes to allow the chocolate to harden.
- Slice and Serve: After chilling, lift out the bars using the parchment paper edges. Place on a cutting board and cut into 1/2-inch strips, then cut each strip into thirds. Note: avoid leaving the chocolate in the freezer too long as extreme cold may cause cracking during slicing.
- Storage: Store finished TWIX bars in an airtight container either in the refrigerator or freezer to maintain freshness and texture.
Notes
- If you prefer a vegan version, substitute honey with maple syrup in the shortbread.
- Use any nut or seed butter of your choice for the caramel layer to customize flavors.
- The bars keep best when stored chilled in an airtight container to prevent melting and preserve texture.
- For easier cutting, let the bars come to just above freezer temperature to prevent cracking the chocolate layer.
