Ingredients
Ingredients
- 1 tbsp unsalted butter
- 2 pounds frozen corn
- 5 cloves garlic, minced
- 1 cup light thickened cream
- 1 cup light cream cheese, softened
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar (optional)
- 1/4 tsp ground nutmeg
- 1/2 cup parmesan, freshly grated
- 1/2 cup chicken stock
Instructions
- Melt Butter: In a large pot over medium heat, melt the unsalted butter carefully to avoid burning.
- Sauté Garlic: Add the minced garlic to the melted butter and cook for 30 to 45 seconds until fragrant, making sure not to brown it to prevent bitterness.
- Create Cream Sauce: Pour in the light thickened cream, softened cream cheese, and chicken stock. Whisk continuously to combine thoroughly until the mixture is smooth and fully blended.
- Simmer Sauce: Let the cream sauce gently simmer for 2 to 3 minutes until it slightly thickens, stirring occasionally to prevent sticking.
- Add Corn and Seasonings: Stir in the frozen corn along with salt, black pepper, optional sugar, and ground nutmeg. Mix well and simmer gently for 6 to 8 minutes until the corn is tender and the sauce becomes creamy.
- Incorporate Parmesan: Add 1/2 cup of freshly grated parmesan cheese to the pot and stir until it melts smoothly into the sauce. Taste and adjust seasoning as needed.
- Broil for Finish: Transfer the creamy corn mixture to an oven-safe dish, sprinkle extra parmesan on top, and broil at 200°C (approximately 400°F) for 5 minutes until the top is golden and slightly crisp.
- Rest and Serve: Allow the dish to rest for a few minutes to thicken slightly, then serve warm, garnished with chopped parsley if desired.
- Enjoy: Dig into your healthy, creamy, low-fat corn side dish!
Notes
- Use light cream and light cream cheese to keep the fat content low without sacrificing creaminess.
- Do not brown the garlic to maintain a smooth, subtle garlic flavor.
- Optional sugar balances acidity and enhances sweetness but can be omitted for lower sugar content.
- Broiling adds a lovely golden crust, but keep a close eye to avoid burning.
- For a vegetarian option, substitute chicken stock with vegetable stock.
- Parsley on top adds freshness and color but is optional.
