Instructions
- Preheat and Prepare Apples: Preheat your oven to 350℉ (175℃). Peel the apples and dice them into small cubes until you have about 2 cups of chopped apples.
- Mix Wet Ingredients: In a large bowl, whisk the two eggs until smooth. Add melted coconut oil, honey, soy milk, and vanilla extract, then whisk again to combine all wet ingredients thoroughly.
- Create Oat Flour: Place rolled oats into a blender and blend until a fine oat flour forms. Shake the blender halfway through blending to ensure even processing. Work in batches if needed to avoid overcrowding.
- Combine Dry Ingredients: Add the oat flour, cinnamon powder, and a pinch of salt to the wet mixture. Lightly whisk until fully combined, ensuring no flour remains at the bottom of the bowl.
- Add Baking Powder and Apples: Stir baking powder into the batter, then gently fold in the chopped apples using a rubber spatula, being careful not to overmix.
- Prepare Cake Tin and Garnish: Line an 8-inch (20 cm) round cake tin with parchment paper. Pour the batter evenly into the tin and level the top. Sprinkle a small handful of rolled oats and chopped walnuts over the batter as garnish. Lightly tap the tin on the counter to settle the mixture.
- Bake the Cake: Bake for 40-45 minutes in the preheated oven. Test doneness by inserting a toothpick in the center; it should come out clean or with just a few crumbs, not wet batter.
- Cool the Cake: Let the cake rest in the tin for 15 minutes after baking, then transfer it to a wire cooling rack for at least 20 minutes to allow the center to set completely.
- Serve: Optionally dust with icing sugar before slicing. Enjoy the apple cake fresh, paired perfectly with coffee or a scoop of vanilla ice cream.
