Ingredients
Filling
- 1 pound ground turkey
- 1 tablespoon olive oil (plus extra for drizzling)
- Salt and pepper, to taste
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1 (14-ounce) can diced tomatoes, with juices
- 1 ½ cups cooked long grain rice
- ⅓ cup chopped fresh Italian parsley (plus more for garnish)
- 1 ½ cups shredded mozzarella cheese (divided)
- ¼ cup shredded parmesan cheese
Peppers
- 3 large bell peppers (assorted colors)
- Olive oil, for drizzling inside peppers
- Salt and pepper, for sprinkling inside peppers
- ⅓ cup water, for baking dish
Instructions
- Preheat Oven: Preheat your oven to 375ºF to prepare for baking the stuffed peppers.
- Cook Ground Turkey: Heat 1 tablespoon of olive oil in a large deep skillet over medium-high heat. Add the ground turkey, breaking it up with a spatula, and cook until fully browned.
- Sauté Aromatics: Push the cooked turkey to one side of the skillet. Drizzle a little more olive oil and add diced onions and minced garlic. Cook for 1-2 minutes until fragrant, then mix with the turkey.
- Add Seasonings and Rice: Stir in the dried Italian seasoning, canned diced tomatoes with juices, and cooked rice. Season the mixture with salt and pepper. Add chopped parsley and ½ cup mozzarella cheese, then combine well. Remove from heat.
- Prepare Peppers: Cut each bell pepper in half from top to bottom and remove seeds and stems. Drizzle the inside with olive oil and sprinkle with salt and pepper. To keep them stable, cut a thin slice off the bottom of each pepper half.
- Stuff Peppers: Fill each pepper half evenly with the prepared turkey and rice filling. Arrange the stuffed peppers in a 9×13 inch baking dish with the filling side facing up.
- Add Water and Cover: Pour about ⅓ cup of water into the bottom of the baking dish to create steam for tenderizing the peppers during baking. Cover the dish tightly with aluminum foil.
- Bake Covered: Bake the covered peppers in the preheated oven for 30 to 35 minutes until the peppers are tender.
- Add Cheese Topping and Finish Baking: Remove the foil and evenly sprinkle the remaining 1 cup mozzarella cheese and the parmesan cheese over the stuffed peppers. Return the dish to the oven uncovered and bake for 10-12 minutes until the cheese is melted.
- Broil for Golden Finish: Switch the oven to broil and broil the peppers for 1-2 minutes more until the cheese tops turn golden brown.
- Garnish and Serve: Sprinkle chopped fresh parsley over the peppers, then serve immediately and enjoy this delicious meal.

- For best results, use long grain white rice cooked according to package instructions.
- You can substitute ground chicken or lean beef for ground turkey if preferred.
