Beef and Seasonings
- 1 pound ground beef
- 1 tablespoon tomato paste
- 1 tablespoon apple cider vinegar
- 1 teaspoon chipotle chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder

- ¼ teaspoon oregano
- ½ lime, juiced
- 1 tablespoon avocado oil
Rice
- 1 cup long grain white rice
- 2 cups low sodium chicken broth
- ¾ teaspoon salt
- ½ teaspoon lime zest
- ½ teaspoon fresh lime juice
- ¼ cup fresh cilantro, chopped
Toppings & Additions
- Black beans, drained and heated
- ½ cup diced tomatoes
- White queso cheese
- 1 cup green lettuce, sliced
- ½ cup roasted corn salsa
- ½ cup sour cream
- Diced avocado or homemade guacamole
- Fresh cilantro for garnish
Instructions
- Prepare the Rice: Heat the avocado oil in a medium-sized skillet or pot with a lid. Add the rice and stir to coat in the oil. Cook the rice until it starts to toast, becoming a brighter white color.
- Cook the Rice: Pour in the chicken broth and sprinkle in the salt. Bring to a simmer, then cover with the lid and cook for 20 minutes until rice is tender and liquid is absorbed.
- Let Rice Rest: Remove the pot from heat, keep the lid on, and let the rice sit for at least 10 minutes to steam and finish cooking.
- Fluff and Season Rice: Remove the lid, fluff the rice with a fork, then stir in lime zest, lime juice, and chopped cilantro for a fresh, bright flavor.
- Cook the Ground Beef: Heat a medium skillet over medium heat, add the ground beef, and break it up with a wooden spoon. Cook until browned and no longer pink. Drain excess grease.
- Season the Beef: Reduce heat to low, add tomato paste, apple cider vinegar, chipotle chili powder, cumin, garlic powder, salt, oregano, and stir to combine. Cook for 2-3 minutes to meld flavors. Squeeze fresh lime juice over the meat.
- Assemble the Burrito Bowls: In individual bowls, layer the lime rice, seasoned ground beef, heated black beans, and your choice of toppings such as diced tomatoes, white queso, sliced lettuce, roasted corn salsa, sour cream, diced avocado or guacamole, and garnish with fresh cilantro.

- Use low sodium chicken broth to control the saltiness in the rice.
