Ingredients
Protein and Vegetables
- 1 lb lean ground beef
- 1 lb broccoli, chopped into about 1 inch florets (8-10 cups)
Grains and Liquids
- 1 and 1/2 cups brown rice
- 4 and 1/4 cups water
Seasonings and Sauces
- 2 tsp garlic powder
- 1 and 1/2 tsp ground ginger
- 1/3 cup coconut aminos (or tamari or soy sauce)
- 1 tbsp rice vinegar
- 1 and 1/2 tsp sesame oil
- 1 and 1/2 tsp sriracha
Garnish
- 1/4 cup green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Brown the Ground Beef: In a large skillet over medium heat, add the lean ground beef. Cook while stirring and crumbling the meat until it’s fully browned and no longer pink, about 5-8 minutes. Drain any excess grease from the skillet if necessary to keep the dish light.
- Add Rice and Spices: To the browned beef, stir in the brown rice, garlic powder, and ground ginger. Increase the heat to medium-high. Cover the skillet and bring the mixture to a gentle simmer, then reduce the heat back to medium to maintain the simmer. Let it cook covered for 15 minutes, allowing the rice to begin absorbing the liquid.
- Cook Broccoli with Rice: After 15 minutes, stir the rice gently, then spread the chopped broccoli florets evenly on top of the rice. Cover the skillet again and cook for an additional 15-20 minutes, until the water is almost evaporated and the rice is tender along with the broccoli softening to just the right texture.
- Add Sauces and Flavorings: Remove the skillet from the heat. Stir in the coconut aminos, rice vinegar, sesame oil, and sriracha thoroughly, coating the beef, rice, and broccoli evenly with this savory, tangy, and mildly spicy sauce blend.
- Serve and Garnish: Serve the ground beef and broccoli mixture hot, topped with the fresh chopped green onions and a sprinkle of toasted sesame seeds for a fresh crunch and nutty aroma.
Notes
- For a gluten-free option, ensure the coconut aminos or tamari sauce used is labeled gluten-free.
- To reduce sodium, opt for low-sodium coconut aminos or tamari.
- You can substitute ground turkey or chicken for ground beef for a leaner version.
- If you prefer a spicier dish, increase the amount of sriracha to taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Reheat gently on the stovetop or microwave to maintain the texture of the broccoli.
