Instructions
- Preheat the Grill: Preheat your grill to medium-high heat, approximately 350°F, to prepare for grilling the vegetables.
- Slice the Vegetables: Cut the zucchini and squash lengthwise into 1/3 inch thick slices to ensure even grilling and a nice texture.
- Season the Slices: Place the zucchini and squash slices in a large tray. Drizzle with the oil, sprinkle the garlic parsley salt evenly, and add a splash of lemon juice if desired. Toss gently to coat all slices.
- Grill the Vegetables: Arrange the seasoned zucchini and squash slices on the grill. Cook for about 2 minutes on each side, turning carefully until all sides are lightly golden and tender.
- Serve: Remove the grilled zucchini and squash from the grill and serve hot for best taste, or enjoy them cool as a refreshing side.
