Ingredients

Steaks and Rub

  • 2 1/2″ thick bone-in steaks (or your favorite cut of steak)
  • 2 teaspoons oil
  • 3 Tablespoons salt
  • 2 Tablespoons brown sugar
  • 1 Tablespoon ground black pepper
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon corn starch

Herb Butter

  • 1/2 cup unsalted butter, softened
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 Tablespoon freshly chopped rosemary
  • 1 Tablespoon freshly chopped parsley

Instructions

  1. Make steak rub: In a small bowl, combine 3 Tablespoons salt, 2 Tablespoons brown sugar, 1 Tablespoon ground black pepper, 1 1/2 teaspoons paprika, 1 1/2 teaspoons chili powder, 1 teaspoon garlic powder, 3/4 teaspoon onion powder, and 3/4 teaspoon corn starch. Mix well to integrate all spices.
  2. Prepare herb butter: In a medium bowl, mix 1/2 cup softened unsalted butter, 2 teaspoons minced garlic, 1/2 teaspoon salt, 1/8 teaspoon ground black pepper, 1 Tablespoon freshly chopped rosemary, and 1 Tablespoon freshly chopped parsley. Use a hand mixer to beat the mixture for 1-2 minutes until light and fluffy. Shape into a log using plastic wrap and chill in the refrigerator until ready to serve.
  3. Trim and season steaks: Trim any large fat pieces from the steaks and pat dry with paper towels. Rub each steak on both sides with 1 teaspoon oil. Then rub 2 Tablespoons of the prepared dry rub onto each steak on both sides, pressing gently so the rub adheres well.
