Steaks and Rub
- 2 1/2″ thick bone-in steaks (or your favorite cut of steak)
- 2 teaspoons oil
- 3 Tablespoons salt
- 2 Tablespoons brown sugar
- 1 Tablespoon ground black pepper
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 3/4 teaspoon corn starch
Herb Butter
- 1/2 cup unsalted butter, softened
- 2 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 Tablespoon freshly chopped rosemary
- 1 Tablespoon freshly chopped parsley
Instructions
- Make steak rub: In a small bowl, combine 3 Tablespoons salt, 2 Tablespoons brown sugar, 1 Tablespoon ground black pepper, 1 1/2 teaspoons paprika, 1 1/2 teaspoons chili powder, 1 teaspoon garlic powder, 3/4 teaspoon onion powder, and 3/4 teaspoon corn starch. Mix well to integrate all spices.
- Prepare herb butter: In a medium bowl, mix 1/2 cup softened unsalted butter, 2 teaspoons minced garlic, 1/2 teaspoon salt, 1/8 teaspoon ground black pepper, 1 Tablespoon freshly chopped rosemary, and 1 Tablespoon freshly chopped parsley. Use a hand mixer to beat the mixture for 1-2 minutes until light and fluffy. Shape into a log using plastic wrap and chill in the refrigerator until ready to serve.
- Trim and season steaks: Trim any large fat pieces from the steaks and pat dry with paper towels. Rub each steak on both sides with 1 teaspoon oil. Then rub 2 Tablespoons of the prepared dry rub onto each steak on both sides, pressing gently so the rub adheres well.
- Preheat grill and sear steaks: Preheat half of your grill to 500°F, leaving the other half off. Place the steaks on the hot side and sear each side for 1 1/2 minutes with the grill lid closed to lock in flavors.
- Cook steaks over indirect heat: Move the steaks to the cooler half of the grill, close the lid, and cook for an additional 7 minutes to reach desired doneness while allowing heat to distribute evenly.
- Rest the steaks: Remove the steaks from the grill and place on a platter. Let them rest for 15 minutes to allow juices to redistribute for maximum tenderness and flavor.
- Serve with herb butter: Top each rested steak with slices of the chilled herb butter and serve immediately to enjoy the rich, garlicky finish.
