Ingredients
For the Romaine:
- 3 romaine hearts, cut in half
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 cup grated parmesan cheese
For the Dressing:
- 1/4 cup plain yogurt
- 3 tablespoons finely chopped mint
- 1 tablespoon chopped fresh dill
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- Water, as needed to thin the dressing
Instructions
- Preheat the Grill: Heat a grill or grill pan to medium-high heat to prepare it for cooking the romaine hearts evenly.
- Clean the Romaine: Wash any grit or dirt off the romaine hearts and pat them dry thoroughly with a paper towel to ensure they grill properly without steaming.
- Season the Romaine: Brush olive oil evenly on both sides of each romaine half. Sprinkle sea salt and ground black pepper over them for seasoning.
- Grill the Romaine: Place the romaine hearts cut side down on the hot grill and cook for 3 minutes to create grill marks and slight wilting. Flip the hearts over, sprinkle parmesan cheese on top, and continue grilling for another 2 minutes until the cheese melts slightly.
- Remove from Grill: Transfer the grilled romaine hearts onto a large serving platter, ready for dressing.
- Prepare the Dressing: In a medium bowl, whisk together plain yogurt, chopped mint, fresh dill, red wine vinegar, olive oil, sea salt, and black pepper. Add water a tablespoon at a time as needed to thin the dressing to your desired consistency.
- Serve: Drizzle the prepared herb yogurt dressing generously over the grilled romaine hearts and serve immediately to enjoy the mix of warm greens and cool dressing.
Notes
- Make sure the grill is sufficiently hot to achieve nice char marks without overcooking the lettuce.
- If you do not have a grill, a grill pan on the stovetop works equally well.
- The dressing can be adjusted by adding more herbs or vinegar depending on your taste preference.
- Serve right after dressing to maintain the romaine’s crispy texture.
