These Grilled Ranch Potato Caprese Skewers combine flavorful, herb-infused ranch potatoes with fresh cherry tomatoes and creamy mozzarella balls, all grilled to perfection and finished with a drizzle of balsamic glaze and fresh basil. A fresh, easy-to-make appetizer or light meal that’s perfect for summer grilling.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 1 package The Little Potato Company A Little Homestyle Ranch Microwave Ready Kit (prepared according to package directions)

Vegetables & Cheese

  • 1 pint cherry tomatoes
  • 8 ounces ciliegine mozzarella (cherry-sized mozzarella balls, drained; use rennet-free if vegetarian)
  • 1/4 cup fresh basil leaves

Others

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons balsamic glaze

Instructions

  1. Prepare the Ranch Potatoes: Cook the ranch potatoes following the package instructions until fully heated. Allow them to cool slightly so they can be handled safely without burning your fingers.
  2. Assemble the Skewers: Thread one cherry tomato, one ranch potato, one mozzarella ball, another ranch potato, and a final cherry tomato onto each skewer. Continue this pattern until the skewer is full. Repeat the process until all ingredients are used and skewers are assembled.
  3. Brush with Olive Oil: Lightly brush each assembled skewer with extra virgin olive oil to promote even grilling and prevent sticking.
  4. Grill the Skewers: Place the skewers on a grill preheated to medium heat. Grill for 2-4 minutes, turning occasionally, until the cherry tomatoes blister slightly and the ingredients are warmed through. Alternatively, use a lightly greased grill pan over medium heat on the stovetop following the same grilling process.
  5. Finish and Serve: Arrange the grilled skewers on a serving platter. Garnish with fresh basil leaves and drizzle generously with balsamic glaze just before serving to enhance flavor and presentation.

Notes

  • Use rennet-free mozzarella to keep this recipe vegetarian.
  • Ensure potatoes are cooled enough to handle safely but still warm enough to absorb flavors from grilling.
  • For easy cleanup, soak skewers in water for 30 minutes before assembling to prevent burning.
  • Balsamic glaze adds a sweet and tangy finish—substitute with balsamic vinegar reduction if unavailable.
  • These skewers can also be prepared on an indoor grill pan if outdoor grilling is not possible.
