Ingredients
Marinade and Mushrooms
- 4 large portobello mushrooms, stems removed and dry brushed clean
- 3 tablespoons balsamic vinegar
- 3 tablespoons gluten-free tamari (or substitute soy sauce)
- 2 tablespoons grapeseed oil (or preferred oil)
- 1 tablespoon vegan Worcestershire sauce (or substitute vegan steak sauce)
- 1-2 teaspoons liquid smoke (or substitute with 1 teaspoon smoked paprika)
- 1 large garlic clove, minced or crushed
- 1/2 teaspoon granulated onion
- Salt and fresh cracked pepper, to taste
Instructions
- Prepare the Marinade: In a large and shallow baking dish, whisk together the balsamic vinegar, gluten-free tamari, grapeseed oil, vegan Worcestershire sauce, liquid smoke, minced garlic, granulated onion, salt, and fresh cracked pepper. Taste the mixture and adjust seasoning as desired, keeping in mind the flavors will concentrate during cooking.
- Marinate the Mushrooms: Add the cleaned portobello mushrooms to the dish. Liberally brush the marinade on all sides of the mushrooms with a brush or spoon the liquid over them. Allow to sit for 10-20 minutes, flipping and brushing with marinade again halfway through to ensure even flavor absorption.
- Heat the Cooking Surface: Preheat a grill, grill pan, or skillet over medium-high heat until fully hot. Brush the surface lightly with oil to prevent sticking and promote searing.
- Grill the Mushrooms: Place the marinated mushrooms on the hot surface. Let them sizzle upon contact and avoid moving them for at least 4-5 minutes to develop a good sear. Gently press down with a spatula or tongs to enhance contact.
- Flip and Finish Cooking: Flip the mushrooms over and sear the other side for another 4-5 minutes until browned and tender. Add additional oil or brush more marinade on if desired during cooking.
- Serve: Remove the mushrooms from the heat and serve immediately as a main dish or a hearty side. Enjoy the smoky, rich flavor and tender texture!

- Make sure mushrooms are dry brushed clean and not washed with water to prevent sogginess.
- Liquid smoke adds authentic smoky flavor; if using smoked paprika instead, you can omit the liquid smoke.
