Ingredients
Steak
- 1 pound of steak (ribeye, sirloin, or your choice; see notes for doneness)
Marinade
- 1/2 cup steak marinade (store-bought or homemade marinade such as olive oil, soy sauce, garlic, Worcestershire sauce, and herbs)
Seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Make marinade: Prepare your steak marinade by mixing your chosen ingredients if making it from scratch, or simply use a store-bought marinade.
- Marinate steaks: Place the steaks in a covered glass dish or large freezer bag. Pour the marinade over the steaks, massaging or tossing to coat all sides evenly. Refrigerate and let the steaks marinate for 4 to 8 hours, or up to 12 hours for maximum flavor.
- Preheat grill: Heat your grill on high until it reaches about 500°F (260°C) to ensure a perfect sear.
- Prep steaks for grilling: Remove steaks from the marinade and pat dry with paper towels to promote browning. Lightly oil either the grill grates or the steaks themselves to prevent sticking. Season with salt and freshly ground black pepper.
- Grill steaks: Place steaks on the hot grill and sear each side for 2-3 minutes to develop a flavorful crust. Check internal temperature with a meat thermometer. Then either reduce the heat to medium-low or move the steaks to indirect heat to finish cooking to your preferred doneness (use a steak temperature chart to guide timing).
- Rest and serve: Transfer steaks to a cutting board or plate and let them rest for 5 minutes. This resting period allows juices to redistribute for a juicy, tender bite. Slice against the grain and enjoy!
Notes
- Choose steak cuts like ribeye, sirloin, or New York strip for best grilling results.
- Marinating longer (up to 12 hours) enhances flavor and tenderness but beyond that can affect texture negatively.
- Use a meat thermometer to check doneness: 125°F for rare, 135°F medium-rare, 145°F medium, 155°F medium-well, and 160°F well done.
- Resting steaks after grilling is crucial to retain juices and maintain tenderness.
