Instructions
- Prepare the Marinade: In a bowl or marinating container, combine the stone ground mustard, Dijon mustard, maple syrup, and apple cider vinegar. Finely chop the rosemary and stir it into the mixture thoroughly to ensure all flavors are well incorporated.
- Season the Chicken: Trim any excess fat from the thin sliced chicken breasts. Sprinkle both salt and black pepper evenly over the chicken to add seasoning before marinating.
- Marinate the Chicken: Place the chicken pieces into the marinade and stir gently to coat each piece well. Cover and refrigerate the marinating chicken for a minimum of 30 minutes to allow flavors to penetrate, or up to 24 hours for more intense taste.
- Preheat the Grill: Heat your gas grill to approximately 350°F (medium-high heat). This temperature is ideal for cooking the chicken evenly while achieving a nice sear.
- Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip or be wiped off against the bowl, preventing flare-ups on the grill. Place the chicken over direct heat and grill for 3 to 4 minutes on each side until the exterior is nicely charred and the internal temperature reaches 165°F for safe consumption.
- Rest and Serve: Once grilled, remove the chicken from the heat and let it rest for 3 to 5 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring a moist and flavorful bite when served.

- Marinating time can be adjusted depending on your schedule; longer marinating enhances flavor but 30 minutes is sufficient for a good taste.
