Butter Mixture
- 1/2 cup butter (melted)
- 1 tablespoon lemon juice
- 2 tablespoons parsley (chopped, plus extra to garnish)
- 1 tablespoon chives (chopped, plus extra to garnish)
- 4 cloves garlic (minced)
- 1/4 teaspoon coarse salt (plus extra to season)
- 1 pinch black pepper (a pinch to taste)
- 1 pinch red pepper flakes (a pinch to taste)

- 4 lobster tails
- 1 tablespoon extra-virgin olive oil (for brushing)
- Lemon wedges (for serving)
Instructions
- Preheat Grill: Preheat a grill or grill pan over medium heat, preparing it for cooking the lobster tails evenly.
- Prepare Lobster Tails: Using kitchen shears, cut along the top of the lobster shell to expose the meat. Then, use a knife to slice the lobster tail lengthwise down the center to separate the meat.
- Make Garlic Herb Butter: In a small bowl, whisk together the melted butter, lemon juice, chopped parsley, chopped chives, minced garlic, salt, and black pepper until fully combined. Set aside for later use.
- Season Lobster Meat: Brush the exposed lobster meat all over with extra-virgin olive oil. Season the meat with salt and black pepper to enhance flavor and prevent drying out during grilling.
- Grill Lobster – First Side: Place the lobster tails flesh side down on the grill. Grill until the meat is lightly charred, about 5 to 6 minutes, to develop a smoky flavor and appealing grill marks.
- Grill Lobster – Flip and Butter: Flip the lobster tails over and generously brush the meat with half of the prepared garlic herb butter. Cover the grill with a lid and continue cooking for another 3 to 4 minutes until the lobster is just cooked through.
- Finish and Season: Remove the lobster from the grill. Season with additional salt, black pepper, and a pinch of red pepper flakes for a subtle heat boost.
- Serve: Brush the lobster tails with the remaining garlic herb butter and garnish with extra chopped parsley and chives. Serve immediately with lemon wedges on the side.
Notes
- When cutting the lobster shells, be careful to avoid injury and to expose the meat for easier grilling.
- Adjust the amount of red pepper flakes according to your preference for spice.
- Use a grill pan if a traditional grill is unavailable, to achieve similar char marks and flavor.
- Do not overcook the lobster as it can become tough; meat should be opaque and tender.
- The garlic herb butter can be prepared ahead of time and stored in the refrigerator.
