Instructions

  1. Prepare the tomatoes: In a large bowl, combine quartered cherry tomatoes, crushed garlic, and diced red onion. Drizzle with extra virgin olive oil and season with salt and pepper to taste. Gently mix the ingredients and let them marinate while you prepare the other components.
  2. Add lettuce and basil: Add the thinly sliced gem or romaine lettuce along with chopped fresh basil to the tomato mixture. Toss everything together thoroughly to ensure the lettuce is well coated and mixed with the marinated tomatoes.
  3. Grill the halloumi: Heat a grill pan over medium heat. Pat the halloumi slices dry with paper towels to remove excess moisture.
