Ingredients
Browned Bourbon Butter
- 2 sticks unsalted butter
- 2 shots bourbon
Cookie Dough
- 1 cup brown sugar
- 1/4 cup white sugar
- 1/4 cup maple syrup
- 1 tbsp vanilla extract
- 1 egg
- 1 egg yolk
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 to 3 cups dark chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) to prepare for baking the cookies.
- Make Browned Bourbon Butter: In a large saucepan over medium heat, melt the two sticks of unsalted butter. Stir frequently and watch carefully as the butter transitions from yellow to a golden brown color—this should take a few minutes. Remove the pan from heat immediately to avoid burning. Pour in two shots of bourbon and stir to combine. Let the mixture cool to room temperature before using.
- Mix Wet Ingredients: In a stand mixer, combine the cooled browned bourbon butter with brown sugar, white sugar, maple syrup, vanilla extract, egg, and egg yolk. Beat until the mixture is smooth and creamy.
- Add Dry Ingredients: Gradually add the all-purpose flour into the wet mixture in small increments to prevent overflow while mixing. Then incorporate the baking soda and salt and continue mixing until fully combined.
- Add Chocolate Chips: Fold in the dark chocolate chips evenly throughout the dough using the mixer at low speed or a spatula.
- Chill Dough: Scoop large balls of the cookie dough onto a lined baking sheet. Place the dough in the refrigerator for at least one hour to firm up; longer chilling or freezing is also possible if desired.
- Bake Cookies: Bake the cookies in the preheated oven for 12 minutes. The cookies may seem slightly undercooked, but they will set perfectly as they cool. Remove from the oven.
- Cool and Serve: Transfer the cookies to a cooling rack and allow them to cool completely so they set properly. Enjoy warm or at room temperature for the best gooey texture.
Notes
- Watch the browned butter carefully to avoid burning; it should be a golden brown color and smell nutty.
- Chilling the dough helps prevent spreading and improves flavor and texture.
- Use high-quality dark chocolate chips for best flavor and gooey texture.
- Alcohol in the bourbon largely cooks off but adds depth of flavor; you can reduce the amount if preferred.
- Cookies can be frozen before or after baking for longer storage.
