Brownie Batter

Instructions
- Prepare the skillet and melt butter: Place a suitable skillet over low heat and melt the ½ cup unsalted butter until fully melted and smooth, ensuring it doesn’t brown.
- Add chocolate chips to melt: Stir in the 7 ounces chocolate chips into the melted butter and continue on low heat until the chocolate is completely melted and combined with the butter.
- Mix sugar, eggs and vanilla: Remove the skillet from heat. Stir in the ¾ cup white sugar, then beat in the 2 eggs one at a time. Add 1 teaspoon vanilla extract and mix thoroughly until smooth.
- Combine dry ingredients: In a separate bowl, whisk together ⅓ cup gluten free all purpose baking flour, 3 tablespoons cocoa powder, 1 tablespoon tapioca starch, and ½ teaspoon salt.
- Incorporate dry ingredients into batter: Gradually mix the dry ingredients into the wet chocolate mixture in the skillet, stirring just until combined and smooth.
- Add optional chocolate chips: Fold in the optional ½ cup chocolate chips to add extra chocolate texture within the batter.
- Cook the brownie in the skillet: Return the skillet to low-medium heat and cook the batter gently. Cook until the edges are set and the center is mostly firm but still slightly gooey; about 15-20 minutes depending on skillet size and heat. Avoid cooking at too high temperature to prevent burning.
- Cool and serve: Allow the skillet brownie to cool slightly before slicing and serving warm for the best fudgy texture.
