- 1 1/2 tablespoons coconut sugar

- 1 1/2 tablespoons coconut sugar

Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a 1¾-quart baking dish with coconut oil spray or any nonstick cooking spray to prevent sticking.
- Make the Filling: In a large bowl, combine the peeled and sliced peaches with coconut sugar, maple syrup, tapioca starch, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Stir until all ingredients are evenly mixed and coated. Transfer this peach mixture into the prepared baking dish, spreading evenly.
- Prepare the Topping: In a medium bowl, mix together almond flour, tapioca flour, and baking powder. Add almond or coconut milk, melted butter (or vegan alternative), vanilla extract, and 1½ tablespoons of coconut sugar. Stir using a wooden or rubber spatula until the batter is smooth with no clumps. It will be slightly wet initially but will thicken.
- Assemble the Cobbler: Dollop the topping batter over the peach filling by spoonfuls, leaving some peaches exposed for a rustic look. In a small bowl, combine the remaining 1½ tablespoons coconut sugar with 1 teaspoon cinnamon and sprinkle this cinnamon sugar evenly over the topping dollops.
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes. The cobbler is ready when the topping is golden and a toothpick inserted in the center comes out clean.
- Serve: Let the cobbler cool slightly before serving. Enjoy warm, topped with whipped cream or vanilla ice cream for a delightful treat.
