  • Total Time: 30 minutes
  • Yield: 8-10 sliders

Ingredients

Chicken

  • 3-4 organic chicken breasts, trimmed and tenderized to 1/2-inch thick
  • 1/2 cup arrowroot starch powder
  • 3/4 cup cassava flour
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp sea salt
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp ground pepper
  • 3-5 tbsp avocado oil
  • 2 eggs

Hot Honey Sauce

  • 1/4 cup hot sauce (Cholula, Frank’s, or any preferred)
  • 2-3 tbsp honey

Sliders

  • Buns (gluten-free if desired)
  • Lettuce leaves

Instructions

  1. Prepare Dredging Bowls: Set out three shallow bowls: one with arrowroot starch powder, one with two whisked eggs, and one with cassava flour mixed thoroughly with garlic powder, chili powder, sea salt, paprika, onion powder, and ground pepper. This setup will help coat the chicken evenly.
  2. Slice and Tenderize Chicken: Trim any excess fat from the chicken breasts and tenderize to 1/2-inch thickness. Then slice each breast in half to create smaller chicken pieces suitable for sliders.
  3. Coat Chicken: Dredge each chicken piece first in the arrowroot starch, then dip into the whisked eggs, and finally coat in the seasoned cassava flour mixture. Ensure each piece is fully coated for a crispy crust.
  4. Pan-Fry Chicken: Heat avocado oil in a skillet over medium heat until hot but not smoking. Fry the coated chicken pieces for about 3-5 minutes on each side until golden brown and cooked through. Repeat until all chicken is cooked.
  5. Make Hot Honey Sauce and Toss: In a large bowl, whisk together the hot sauce and honey in a 2:1 ratio. Toss the fried chicken pieces gently in the sauce until completely coated with the sweet and spicy glaze.
  6. Assemble Sliders: Place a piece of lettuce on the slider buns, then add a hot honey coated chicken piece on top. Optionally, add any additional toppings preferred and serve immediately while warm.

Notes

  • For crispy chicken, ensure the oil is sufficiently hot before frying but does not smoke.
  • Adjust honey quantity to taste for sweetness in the hot honey sauce.
  • Use gluten-free buns to keep the recipe fully gluten-free.
  • If you prefer milder heat, reduce the hot sauce or substitute with a milder variety.
  • Leftover chicken can be reheated in a skillet for crispiness or in the oven.
