Cookie Dough

Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons lemon juice

Instructions
- Preheat the Oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the cookies.
- Cream Butter and Sugar: In a stand mixer fitted with the paddle attachment, beat the butter and sugar together until the mixture is light and fluffy, about 3 to 5 minutes.
- Add Wet Ingredients: Gradually add the egg, egg yolk, vanilla extract, and lemon zest to the creamed mixture, mixing on low speed and scraping down the bowl to ensure thorough combination.
- Combine Dry Ingredients: In a separate large bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt until evenly distributed.
- Mix Dough: Slowly add the dry ingredients to the wet ingredients, mixing on low speed until just combined to avoid overmixing.
- Shape Cookies: Using a spoon or small ice cream scoop, portion the dough into 1-inch balls. Place them on a parchment-lined baking sheet spaced about 3 inches apart. Gently flatten each ball with the palm of your hand.
- Bake: Bake the cookies in the preheated oven for 9 to 11 minutes or until the edges become slightly golden. Then remove them and let cool on the baking sheet for a couple of minutes.
- Cool Completely: Transfer the cookies to a wire rack and let them cool fully before glazing.
- Prepare Lemon Glaze: In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Add a little extra lemon juice or water if needed to reach a drizzle-able consistency.
- Glaze Cookies: Use a spoon to drizzle the glaze over the cooled cookies evenly. Allow the glaze to set at room temperature before serving or storing.
