Ingredients
For the Syrup
- 2 cups water
- ½ cup honey or sugar (adjust to taste)
- 12 stems fresh thyme
- 3-inch piece fresh ginger, thinly sliced
For the Lemonade
- 4 cups water
- ½ cup freshly squeezed lemon juice
- Lemon slices, ginger slices, and thyme sprigs for garnish
Instructions
- Make the syrup: In a small pot, combine 2 cups of water, honey or sugar, fresh thyme stems, and thinly sliced ginger. Place over high heat and bring the mixture to a boil.
- Simmer the syrup: Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 15 minutes to infuse the flavors. After simmering, remove from heat and allow it to cool.
- Strain the syrup: When the syrup has cooled, strain it through a fine-mesh sieve into a large pitcher, discarding the solids.
- Prepare the lemonade: Add freshly squeezed lemon juice and the remaining 4 cups of water to the pitcher with the syrup. Stir well to combine all the flavors.
- Add garnish and serve: Optionally, add lemon slices, extra ginger slices, and thyme sprigs into the pitcher for added aroma and aesthetic. Serve the lemonade immediately over ice or refrigerate until chilled.
Notes
- You can adjust the sweetness by varying the amount of honey or sugar according to your preference.
- Freshly squeezed lemon juice yields the best flavor, but bottled lemon juice can be used in a pinch.
- Allowing the lemonade to chill in the refrigerator will enhance the refreshing quality.
- The syrup can be made in advance and refrigerated for up to a week.
