Ingredients
For the Pudding
- ⅔ cup whole milk
- 1 tablespoon granulated sugar (adjust to taste)
- 1 tablespoon fresh ginger juice (from about a 2 inch/5cm knob, peeled, grated, and squeezed)
- 1 tablespoon honey
- ¾ teaspoon dry osmanthus tea
Instructions
- Prepare the ginger juice: Peel and finely grate the ginger using a microplane or fine grater. Pass the grated ginger pulp and juice through a fine mesh strainer or clean towel, squeezing thoroughly to extract as much juice as possible. Measure out one full tablespoon of ginger juice and place it into a small serving bowl.
- Heat the milk: In a saucepan, combine the whole milk and granulated sugar. Heat over medium flame, stirring occasionally until the sugar dissolves. Warm the milk to between 155-158°F (68-70°C), then remove it from the heat to avoid boiling.
- Combine ginger juice with hot milk: Stir the ginger juice briefly, then carefully pour the hot milk from about 5 inches (13 cm) above the bowl to ensure thorough mixing with the ginger juice. Immediately cover the bowl with a flat plate and let it rest undisturbed for 5 minutes, allowing the milk to curdle and set into pudding.
- Prepare osmanthus honey (optional): While the pudding sets, mix the honey and dry osmanthus tea in a small microwave-safe bowl. Microwave for 5 to 10 seconds until the honey bubbles and is fragrant. Stir well and set aside to cool slightly.
- Serve and enjoy: After 5 minutes, uncover the pudding. Drizzle with regular honey or the prepared osmanthus honey for added aroma and sweetness. Enjoy the pudding warm, as traditionally preferred, or refrigerate to serve chilled according to your preference.
Notes
- Use fresh ginger for the best flavorful juice; dry or ground ginger will not yield the same texture or taste.
- The temperature of the milk is critical; too hot and it will curdle too aggressively, too cool and the pudding won’t set properly.
- Adjust sugar and honey amounts to suit your taste preferences or dietary needs.
- Osmanthus honey is optional but adds a lovely floral note that complements the ginger.
- The pudding can be served warm or chilled, but traditional serving is warm.
