This authentic Ghana Meat Pie recipe features a savory ground beef filling encased in a flaky, buttery pastry. Perfect as a snack or light meal, these pies combine spiced beef, tomato puree, and green peppers, baked to golden perfection for a delicious taste of Ghanaian cuisine.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings

Ingredients

Filling

  • 1 tbsp cooking oil
  • 1 medium onion, chopped
  • 300 g ground beef
  • 2 tbsp tomato puree
  • Salt to taste
  • ½ tsp all-purpose seasoning
  • 1 bouillon cube, chopped
  • 1 green pepper, chopped

Dough

  • 3 ⅓ cups self-rising flour
  • Pinch salt
  • 1 cup + 1 tbsp unsalted butter, cold
  • ¼ cup water, cold
  • 1 egg, whisked (for brushing)

Instructions

  1. Prepare the filling: Heat oil in a frying pan over medium heat. Add chopped onion and cook until softened. Add ground beef and cook, stirring occasionally, until browned. Stir in tomato puree and cook for 2 more minutes. Season with salt, all-purpose seasoning, and chopped bouillon cube. Remove from heat and stir in chopped green pepper. Set aside to cool.
  2. Make the dough: Sift the self-rising flour and pinch of salt into a large mixing bowl. Add cold butter and rub it into the flour using your fingers until the mixture resembles breadcrumbs. Gradually add cold water and mix until a dough forms. Transfer dough onto a lightly floured surface and knead gently until smooth. Shape into a disc, wrap in plastic wrap, and chill in the fridge for at least 1 hour or overnight.
  3. Assemble the pies: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out chilled dough to about 1/8-inch thickness. Cut circles using a saucer or round cookie cutter. Place a spoonful of filling in the center of each circle. Fold dough over to form a semi-circle. Lightly brush edges with water to seal, then press edges with a fork to crimp. Poke a few holes on top of each pie for steam to escape. Arrange pies on prepared baking sheet and brush the tops with beaten egg.
  4. Bake: Bake for 20 to 25 minutes or until the pies are golden brown. Remove from oven, allow to cool slightly, then serve.

Notes

  • Use cold butter and water when making the dough to achieve a flaky crust.
  • Adjust seasoning and spices according to personal taste.
  • Ensure the filling is cooled before assembling to prevent dough from becoming soggy.
  • These pies can be frozen before baking; bake from frozen, adding a few extra minutes to the cooking time.
