Instructions
- Preheat the oven: Set your oven to 400 degrees F and allow it to fully preheat to ensure the pan is hot when you add the butter.
- Melt the butter in the pan: Place the butter pieces in a 9×13-inch pan, then put the pan in the oven for 2 to 5 minutes until the butter is fully melted and hot.
- Mix dry and wet ingredients: In a large bowl, whisk together the flour and kosher salt. Pour in the milk and vanilla extract and whisk until combined.
- Beat the eggs: Crack the eggs into a medium bowl, then add them one at a time to the flour mixture, beating well between each addition to ensure a fluffy batter. Whisk until smooth.
- Prepare the pan with hot butter: Remove the pan from the oven and swirl it so the melted butter coats the bottom evenly. The butter needs to be hot so it sizzles when the batter hits it.
- Pour in the batter: Slowly pour the batter into the pan using a figure-8 swirling motion to distribute it evenly and help it puff up during baking.
- Bake the pancakes: Place the pan back in the oven and bake for 15 to 23 minutes or until the pancake is puffed up and lightly golden brown on top.
- Serve: Remove from oven, dust with confectioner’s sugar, cut into squares, and serve immediately with berries, whipped cream, and maple syrup if desired.
