These Garlic Grilled Shrimp Skewers are a flavorful and easy-to-make dish perfect for a quick weeknight dinner or a summer cookout. The shrimp are marinated in a zesty blend of fresh herbs, garlic, lemon juice, and spices, then grilled to juicy perfection, offering a delightful combination of smoky and bright flavors.

  • Total Time: 40 minutes
  • Yield: 5 servings

Ingredients

Shrimp and Marinade

  • 1 pound large shrimp, peeled and deveined
  • ¼ cup olive oil
  • ¼ cup fresh cilantro, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch cayenne pepper (adjust to spice preference)

Instructions

  1. Make Marinade: In a small mixing bowl, whisk together the olive oil, lemon juice, finely chopped cilantro, parsley, minced garlic, salt, black pepper, and cayenne pepper until well combined.
  2. Marinate the Shrimp: Place the cleaned shrimp in a bowl and pour three-quarters of the marinade over them. Gently toss the shrimp to ensure they are evenly coated with the marinade. Cover the bowl and refrigerate for 30 minutes to 1 hour to allow the flavors to meld.
  3. Thread Shrimp: After marinating, thread the shrimp onto skewers, distributing some of the garlic and herbs from the marinade onto the shrimp as you go to maximize flavor.
  4. Preheat Grill: Heat a grill or grill pan over medium-high heat until hot and ready for cooking.
  5. Grill Shrimp Skewers: Place the shrimp skewers on the hot grill. Cook for 2 to 3 minutes on each side, or until the shrimp turn pink, are opaque, and have nice sear marks. Avoid overcooking to keep shrimp tender.
  6. Serve: Transfer the cooked shrimp skewers to a serving plate. Spoon the remaining reserved marinade over the shrimp for extra flavor, and serve immediately.

Notes

  • Soak wooden skewers in water for 20-30 minutes before threading shrimp to prevent burning on the grill.
  • Adjust cayenne pepper to your preferred spice level.
  • Can be served with rice, salad, or grilled vegetables for a complete meal.
  • Ensure shrimp are fully cooked but not overdone to maintain tenderness.
  • This marinade can also be used for other seafood or chicken skewers.
