- 1 medium ripe avocado, cut in half and pit removed
- 2 large eggs
- ⅓ cup (81.33 g) applesauce, or mashed ripe banana
- 2 tablespoons avocado oil, or neutral oil
- ½ cup (92 g) lightly packed brown sugar, or coconut sugar
- 2 teaspoons vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup (43 g) unsweetened cocoa powder
- ½ cup (62.5 g) all-purpose flour
- ½ cup (60 g) mini chocolate chips, plus extra for topping (use dairy-free chocolate chips to keep it dairy-free)
Instructions
- Preheat Oven and Prepare Pan: Heat the oven to 350℉ (175℃). Grease an 8×8 inch square baking pan to prevent sticking.
- Blend Avocado and Wet Ingredients: Scoop the avocado flesh into the bowl of a food processor fitted with the metal “S” blade, or a blender. Add the eggs, applesauce, avocado oil, brown sugar, and vanilla extract. Blend until the mixture is smooth, scraping down the sides of the bowl as needed.
- Add Dry Ingredients: If using a food processor, add the baking soda, salt, cocoa powder, and flour directly and blend until the flour is just incorporated. If using a blender, transfer the wet mixture to a medium bowl, then stir in the baking soda, salt, cocoa powder, and flour with a spatula or wooden spoon just until combined.
- Mix in Chocolate Chips: Gently fold in the mini chocolate chips using a rubber spatula. Then pour the batter into the prepared baking pan, spreading it evenly.
- Add Extra Toppings: Sprinkle extra chocolate chips on top if desired for added texture and flavor.
- Bake the Brownies: Bake in the preheated oven for 20 to 25 minutes, or until the brownies are set and slightly puffed around the edges. The center should be moist but firm.
- Cool and Serve: Allow the brownies to cool completely in the pan before cutting into 9 squares. This helps them set properly for clean slices.
- Storage: Store brownies in an airtight container in the refrigerator for up to one week. For longer storage, wrap well and freeze for up to two months.
