Ingredients
Wet Ingredients
- 2 eggs, room temperature
- 1/3 cup coconut oil
- 1/4 cup maple syrup
Dry Ingredients
- 1/3 cup cacao powder
- 1/4 cup coconut sugar
- 1/3 cup almond flour
- 1/4 tsp baking soda
- 1/2 tsp flaky sea salt
Chocolate
- 1 cup dairy-free dark chocolate chips (divided: 2/3 cup for melting, 1/3 cup for topping)
Instructions
- Preheat the Oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the brownies evenly.
- Melt Chocolate and Coconut Oil: In a small saucepan over low heat on the stovetop, gently melt together the coconut oil and 2/3 cup of the dairy-free dark chocolate chips until fully combined and smooth. Remove immediately to prevent burning and allow to cool for 15 minutes.
- Mix Wet Ingredients: In a medium bowl, whisk the eggs and coconut sugar quickly for about 30 seconds to incorporate air. Then whisk in the maple syrup, followed by the cooled chocolate and coconut oil mixture until smooth.
- Combine Dry Ingredients: Fold in the cacao powder gently until just combined. Sift in the almond flour to ensure no lumps, then carefully stir together along with the baking soda and most of the remaining chocolate chips without over-mixing to keep the batter light and fudgy.
- Prepare Baking Dish and Add Batter: Line a 6×6 or 8×8 baking dish with parchment paper for easy removal. Pour the batter into the dish, smoothing the top, then sprinkle with the remaining chocolate chips and a pinch of flaky sea salt on top.
- Bake and Cool: Place the baking dish in the oven and bake for 22 to 25 minutes, until edges are set but the center remains fudgy. Remove from oven and cool for 30 minutes before slicing to allow brownies to set perfectly. Store leftovers in an airtight container in the refrigerator for 1 to 2 days.
Notes
- Use room temperature eggs to ensure smooth batter and even mixing.
- Do not over-mix the batter once almond flour is added to maintain fudgy texture.
- If dairy-free chocolate chips are hard to find, look for vegan-certified brands.
- For a nuttier flavor, toast the almond flour lightly before mixing.
- Keep an eye on baking time; the center should be moist but not undercooked.
- Store brownies refrigerated to preserve freshness due to coconut oil’s soft texture at room temperature.
