Ingredients
Beef Roast and Seasonings
- 3-4 lbs beef roast
- 1 tbsp kosher salt
- 1/4 tsp freshly-ground pepper
- 1 sprig fresh thyme
- 1 sprig fresh rosemary
- 4 garlic cloves, minced
- 1 onion, sliced
Cooking Liquids and Vegetables
- 1 cup broth
- 2 carrots
- 2 celery sticks
Gravy Ingredients
- 3 c roast drippings
- 3-4 tablespoons flour (can use gluten free)
- 1 cup cold water
- Salt and pepper to taste
Instructions
- Prepare the roast: Rub the beef roast all over with kosher salt. Place the roast inside the Instant Pot or pressure cooker. Add the sliced onions, minced garlic, fresh thyme, fresh rosemary, and broth around the meat.
- Pressure cook the roast: For a thawed roast weighing 3-5 pounds, set the Instant Pot to high pressure and cook for 60-90 minutes. For a frozen roast of the same size, cook on high pressure for 90-120 minutes. After cooking, allow the pressure to release naturally to ensure the meat is tender.
- Make the gravy: Once the roast is done, remove it from the pot and set aside. Switch the Instant Pot to sauté mode and bring the accumulated roast drippings to a boil. Meanwhile, dissolve 3 tablespoons of flour in 1 cup of cold water. Slowly pour this mixture into the boiling drippings while whisking constantly. Continue to boil and whisk until the gravy thickens to your desired consistency. If the gravy needs to be thicker, dissolve an additional tablespoon of flour in water and add it gradually, seasoning with salt and pepper to taste. Keep the gravy at a low simmer and stir occasionally until serving.
- Serve: Slice the roast and serve it hot with your choice of potatoes and the freshly made gravy poured over top.
Notes
- For best results, allow the roast to naturally release pressure after cooking to keep it tender and juicy.
- Use gluten-free flour if you need to avoid gluten when making the gravy.
- If you prefer, you can prepare the gravy separately on the stovetop using a saucepan.
- The carrots and celery can be added during cooking for extra flavor or served separately as a side.
