Ingredients
Fruit Mixture
- 1 cup chopped strawberries
- 1/2 cup blueberries
- 1 cup Greek yogurt
Toppings
- 1/2 cup dark chocolate chips
- 3 tablespoons finely chopped peanuts
- Pinch of flaky sea salt
Instructions
- Prepare the fruit and yogurt mixture: In a medium bowl, combine the chopped strawberries and blueberries. Add the Greek yogurt and stir thoroughly until the mixture is well combined and evenly colored.
- Portion the mixture: Using a 1/3 cup measuring scoop or spoon, drop rounds of the yogurt and berry mixture onto a cutting board or sheet pan lined with parchment paper, spacing them apart.
- Freeze the yogurt bites: Place the sheet pan with the yogurt rounds into the freezer and freeze for 30 minutes, allowing them to firm up.
- Prepare the chocolate drizzle: Place the dark chocolate chips in a microwave-safe bowl and heat in 30-second increments. After each increment, stir the chocolate chips until fully melted and smooth enough to drizzle.
- Drizzle and garnish: Retrieve the frozen yogurt bites from the freezer. One at a time, drizzle each bite with the melted chocolate, then immediately sprinkle with finely chopped peanuts and a pinch of flaky sea salt for texture and flavor contrast. Repeat this step until all bites are decorated.
- Final freezing: Return the decorated bites to the freezer for an additional 2 to 5 minutes to let the chocolate set before serving. Store any leftovers in an airtight container in the freezer.
Notes
- Use full-fat Greek yogurt for creamier texture; low-fat can be used for a lighter version.
- Ensure the chocolate is not overheated to prevent burning; stir frequently while microwaving.
- Experiment with different nuts such as almonds or walnuts for varied crunch.
- These bites can be stored in the freezer for up to one week.
- For a nut-free option, omit the peanuts and use sunflower seeds or toasted coconut flakes instead.
