Onion Mixture
- 1 yellow onion (thinly sliced)
- 2 Tbsp vegan butter
- 2 cloves garlic (minced)
- ½ tsp dried thyme
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 ½ Tbsp balsamic vinegar (or 2-3 Tbsp red wine)
- ½ – 1 cup mushrooms (thinly sliced)
White Sauce
- ½ cup raw cashews (soaked for at least 20 mins in hot water, see notes for nut-free option)
- 1 cup broth (vegetable or preferred)
- 2 tsp lemon juice
- 2 Tbsp nutritional yeast
- 1 tsp Italian seasoning (a mix of oregano, thyme, sage, and rosemary)
- ½ tsp salt
- 1 tsp miso
- ⅛ tsp black pepper
Lasagna and Assembly
- 5 lasagna pasta sheets (5 regular or 7 no-boil, broken into pieces; or 4-5 oz any other flat pasta shape)
- 1-2 cups broth or water (2 cups used in instructions)
- 1-2 cups spinach (firmly packed)
- Red pepper flakes (optional, for serving)
Instructions
- Caramelize Onions: Heat a skillet over medium heat and add the vegan butter and sliced onions. Cook for about 8 minutes, stirring occasionally, until the onions become translucent.
- Add Seasonings: Stir in the minced garlic, dried thyme, salt, and black pepper. Continue cooking until the onions turn a golden color, enhancing their sweetness and depth.
- Deglaze and Caramelize: Pour in the balsamic vinegar or red wine and stir well. Cook until the onions begin to caramelize deeply. Remove about three-quarters of this onion mixture from the skillet and set it aside to use as a garnish later.
- Cook Mushrooms: Add the thinly sliced mushrooms to the skillet with the remaining onions. Stir and cook for 1-2 minutes to soften and integrate them into the flavor base.
- Prepare White Sauce: Meanwhile, blend the soaked cashews, 1 cup broth, lemon juice, nutritional yeast, Italian seasoning, salt, miso, and black pepper until smooth and creamy. Pour this sauce into the skillet with the onion and mushroom mixture, stirring to combine evenly.
- Add Pasta and Broth: Add the broken lasagna sheets to the skillet, then pour in 2 cups broth or water. Press down gently to fully submerge the pasta beneath the liquid, ensuring even cooking.
- Simmer Covered: Cover the skillet and cook over medium-low heat for 12-15 minutes or until the pasta sheets are tender. Stir once halfway through to prevent sticking, and reduce heat if necessary. Add additional water if the mixture thickens too much. Note that no-boil noodles may cook a bit faster, while regular pasta might require a few extra minutes.
- Finish with Spinach: Once the pasta is cooked, taste and adjust salt and seasoning as needed. Stir in the firmly packed spinach and mix gently. Remove from heat and cover the skillet for 3 minutes to allow the spinach to wilt perfectly.
- Serve: Top the lasagna with the reserved caramelized onion garnish and sprinkle with red pepper flakes if desired. Serve warm alongside garlic bread or your preferred side dish for a complete meal.

- For a nut-free white sauce alternative, substitute soaked cashews with cooked white beans or silken tofu blended with the other sauce ingredients.
- Soaking cashews in hot water for at least 20 minutes helps achieve a creamy sauce texture without graininess.
- Adjust the amount of broth during cooking to maintain a slightly saucy consistency and prevent burning.
- No-boil pasta works well to reduce cooking time and simplify the process, but adjust timing based on the brand.
